1 teaspoon of oil
6 medium-sized tomatoes, cut into quarters
6 cups of water (6 tomatoes = ½ a pot of water)
2 yellow onions, sliced
5 Indian green chili peppers
2 garlic cloves, sliced finely (roshun)
2 teaspoons of turmeric powder
1 teaspoon of cumin
1 bunch of cilantro
Prep the Stove: With the stove on high heat, place a pan of 6 cups of water on the stove.
Veggie Preparation: Cut 6 tomatoes into quarters and place them into the pot.
Add the following ingredients to the pot:
1 sliced, yellow onion to the pot.
1 sliced, garlic clove
2 teaspoons of turmeric powder
When the tomatoes begin to separate from their peels, scoop the tomatoes out but leave the pot of water simmering.
Be sure the peels are fully removed from the tomatoes. Then, blend the tomatoes in a blender.
Add Ingredients to the Pot: Pour the tomato mix back into pot and let the mixture simmer.
Stir occasionally.
Add chopped cilantro to the pot.
Once all veggies are soft, mix with wooden mathani (wooden whisk).
Tempering: In a separate pan, add 1 teaspoon of oil and bring to heat.
In that separate pan, fry the remaining yellow onions, 1 teaspoon of cumin, and remaining sliced garlic.
Carefully, add the mixture into the pot and let simmer.
