1 lb shrimp, washed, peeled (keep tail on)
½ yellow onion, diced
3 cloves garlic, diced
3 green peppers, diced
1 Lao Shokla (Lao skin), boiled and drained
Salt, to taste
A handful of cilantro, chopped
2 tablespoons of vegetable oil (for optional stir-frying)
Prep & Cook the Shrimp:
Wash and peel the shrimp, keeping the tail on.
Stir-fry the shrimp in a pan until they turn red.
Remove from the pan and set aside in a bowl.
Prepare the Aromatics:
In the same pan, stir-fry the diced yellow onion until softened.
Add the diced garlic and green peppers, stirring until fragrant.
Cook & Blend the Lao: Boil the Lao shokla (Lao skin) until tender. Drain well and blend until smooth.
Combine Ingredients:
Add the stir-fried onion, garlic, and peppers to the blended Lao.
Season with salt and add cilantro.
Blend again until well mixed.
Add the cooked shrimp and blend briefly to combine.
Adjust Texture (Optional): If the mixture becomes too mushy, stir-fry it in a pan with oil to evaporate excess moisture.
