1 bunch of fresh spinach (about 500g)
2 yellow onions, chopped
5 Indian green chili peppers, sliced lengthwise
3 tablespoons salt
2 tablespoons vegetable oil
1. Prepare the Spinach:
Wash the spinach thoroughly to remove any dirt or grit.
In a large pot, bring water to a boil. Add the spinach to the boiling water.
Let the spinach boil until it is wilted and tender, about 5-7 minutes.
2. Prepare the Aromatics:
While the spinach is boiling, chop the two yellow onions and slice the green chili peppers lengthwise.
3. Cook the Spinach:
Add half of the chopped onions and the sliced green chili peppers to the pot with the boiling spinach.
Stir the mixture occasionally to combine the flavors.
Add 3 tablespoons of salt to the pot and continue to stir
4. Prepare the Tadka (Tempering):
In a separate pan, heat 2 tablespoons of vegetable oil on high heat.
Add the remaining chopped onions to the pan and fry until they are browned and caramelized, about 10-15 minutes.
5. Combine and Simmer:
Once the onions are browned, add the tadka (fried onions) to the pot with the spinach and stir well.
Let the mixture simmer for an additional 5-10 minutes, allowing the flavors to meld together.
6. Serve:
Transfer the spiced spinach to a serving dish.
Serve hot, accompanied by rice, bread, or as a side dish to your main meal.
