1 lb king prawns, cleaned (remove long arms, headshell, devein, and trim tail)
2 yellow onions, sliced
A handful of cilantro, diced
A handful of Indian green chili peppers, sliced in half
1 teaspoon salt
¼ large spoon of turmeric powder
¼ large spoon of red chili powder (optional, for spice)
2 large spoons of vegetable oil
1 cup water
Prep the Prawns & Vegetables:
Clean the king prawns individually by removing the long arms, head shell, deveining, and trimming the tail.
Cut the long arms at the joints.
Wash the prawns thoroughly.
Slice the yellow onions.
Dice the cilantro.
Slice the Indian green chili peppers in half.
Start Cooking the Prawns:
Heat a pan on medium-high heat.
Add vegetable oil and let it heat.
Once heated, add the king prawns and fry until they turn red in color.
Season & Fry:
Add a teaspoon of salt and ¼ large spoon of turmeric powder.
Stir well, ensuring the prawns are evenly coated and well fried.
Add Aromatics & Simmer:
Add the sliced yellow onions and green Indian chili peppers.
Stir to combine.
Add ¼ large spoon of red chili powder (if desired for spice).
Pour in one cup of water and stir.
Finish Cooking:
Let the mixture simmer until the onions soften. Top with diced cilantro and continue simmering until the jhool (gravy) reaches the desired consistency.
