Rice flour

Prepare the Mixture:
Put a pot on the stove and turn the heat to low.
Add a little bit of water to the pot and let it start heating.
Add a pinch of salt to the water.
Add Rice Flour:
When the water starts to boil, reduce the heat to low.
Gradually add rice flour to the pot, stirring continuously to avoid lumps.
Continue to stir until the mixture thickens and comes together.
Cook and Cool:
Cover the pot with a lid and let the mixture cook on low heat, stirring occasionally to prevent sticking.
Once the mixture has cooked through, turn off the stove.
Pour the contents into a bowl and let it cool until it is safe to handle.
Form the Rotis:
Once the mixture is cool enough to handle, take portions of the dough and roll them into flat pieces to form the rotis.
Cook the Rotis:
Heat a pan on low heat.
Cook each roti on the pan until it is cooked through, flipping occasionally to ensure even cooking.
Serve:
Serve the rice flour rotis hot, and enjoy with goat or beef curry!
Tip: During cleanup, remove the rice flour from the pot on the stove, add water and put pot on high heat. Remove the pot, once water comes to a boil, carefully scrape the rice flour that is stuck to the bottom of the pan off.
