1 tablespoon of vegetable oil (Mama Miah adds 3-4 tablespoons)
1 lb of any fish (such as catfish, tilapia, grouper, etc.)
1/2 teaspoon of salt
2 yellow onions
1 bunch of cilantro
5 green chili peppers
1 teaspoons of turmeric
2 teaspoons of chili powder
Additional salt, to taste
Prepare the Fish:
Wash 1 lb of fish and let it sit in 1/2 teaspoon of salt for 10 minutes.
After 10 minutes, drain the water thoroughly and wash the fish again.
Let the fish drain.Â
Pat the fish dry and marinade with 1/2 teaspoon of turmeric and 1 teaspoon of chili powder.
Prepare the Vegetables:
Chop one yellow onion, cilantro, and green chili peppers.
Cooking:
Fry the Vegetables:
Heat the vegetable oil in a pan over medium heat.
Add the chopped onions and green chili peppers to the pan and fry until they start to brown.
Add the chopped cilantro to the pan and mix well.
Once cooked, remove the onions, chilies, and cilantro from the pan and set aside.
Prepare the Fish:
In the same pan, add 1/2 teaspoon of turmeric and 1 teaspoon of chili powder.
Add the fish to the pan and fry until crispy (browning will occur on the outer skin of the fish).
Serve:
Remove the fish from the pan and place it on a serving plate.
Top the fish with the cooked cilantro, onion, and chili pepper mixture.
