Green beans, edges trimmed
Salt (to taste)
2-3 dried chilies
1 yellow onion, chopped
2-3 garlic cloves, sliced
Vegetable oil (for frying)
Chopped coriander (for garnish)
Prepare the Green Beans:
Trim the edges of the green beans.
Bring a pot of water to a boil.
Add the green beans to the boiling water.
Add a little salt and mix together.
Boil until the green beans are tender but still crisp. Drain and set aside.
Fry the Aromatics:
In a pan, heat a little vegetable oil over medium heat.
Add the dried chilies to the pan and fry until they are fragrant.
Add the chopped yellow onion and sliced garlic to the pan.
Sauté until the onion is soft and the garlic is golden brown.
Combine and Mix:
In a bowl, carefully mix the cooked green beans with the fried aromatics.
Crush the dried chilies as you mix to distribute their flavor throughout the dish.
Garnish:
Dice the coriander and add it to the bowl.
Mix gently to combine.
Serve:
Serve immediately as a side dish or a light main course.
