Turmeric powder (quantity to taste)
Chili pepper (quantity to taste)
Salt (quantity to taste)
Oil (for frying)
1 onion, sliced
Shrimp (quantity to taste, cleaned and deveined)
Loti (also known as ridge gourd, quantity to taste, peeled and sliced)
1 tablespoon of garlic paste (roshun)
Water (as needed)
Prepare the Spice Mix:
In a small bowl, mix turmeric powder, chili pepper, and salt. Set aside.
Fry the Onion:
Heat oil in a pan over medium heat.
Add the sliced onion and fry until golden brown.
Add the spice mix and stire for 30 seconds.
Cook the Shrimp:
Add the shrimp to the pan with the fried onions.
Cook until the shrimp turn pink and are fully cooked.
Add Loti:
Add the sliced loti to the pan.
Stir well to combine with the shrimp and onions.
Add Garlic Paste:
Add a tablespoon of garlic paste (roshun) to the pan.
Mix thoroughly.
Simmer:
Pour in enough water to cover the ingredients.
Bring the mixture to a simmer.
Let it cook until the loti softens, and the flavors meld together.
Serve:
Once the loti is tender and the dish has thickened, remove from heat.
Serve hot as a main dish or a side, with rice.Â
