1 cup pulao rice, cooked (not overly done)
Orange food coloring
Almonds (to taste)
Ghee (as needed)
2 bay leaves
3 cinnamon sticks, crushed
2 cups sugar
2 pinches salt
2 tablespoons golden raisins
Optional: United King’s Angoori Chum Chum (drained from syrup)
Prepare the Pulao:
Cook 1 cup of pulao rice until it is just done, not overly cooked.
Add orange food coloring and almonds to the cooked rice. Set aside.
Heat the Ghee:
In a separate pan, heat ghee over medium heat.
Add 2 bay leaves and 3 crushed cinnamon sticks to the pan.
Let it simmer for a few minutes to infuse the flavors into the ghee.
Prepare the Jorda Rice:
Add 2 cups of sugar to the pan and stir until it dissolves.
Add the colored jorda rice to the pan.
Add 2 pinches of salt (be careful not to overdo the salt).
Add 2 tablespoons of golden raisins.
Mix Gently:
Mix the contents together gently to avoid mushing the rice.
If there is too much liquid, drain some of it to achieve the desired consistency.
Optional Addition:
If desired, add United King’s Angoori Chum Chum (drained from syrup) to the jorda and mix gently.
Serve:
Serve the jorda warm, garnished with additional almonds if desired.
