2 tablespoons vegetable oil
1 red onion, chopped
3 Indian green chili peppers, chopped
1/2 teaspoon salt (plus additional to taste)
3/4 teaspoon turmeric powder
1 bunch chives, chopped into 1/4-inch lengths
1/4 cup water
1/4 teaspoon red chili powder
2 large eggs
Prepare the Ingredients:
Chop the red onion.
Chop the green chili peppers.
Chop the chives into 1/4-inch lengths.
Cook the Onions:
In a pan, heat 2 tablespoons of vegetable oil over medium-high heat.
Add the chopped red onion and fry until browning occurs.
Add Spices and Chives:
Add the chopped green chili peppers, 1/2 teaspoon of salt, and 3/4 teaspoon of turmeric powder to the pan.
Stir well to combine.
Add the chopped chives to the pan and stir.
Cook on medium-high heat until the chives soften.
Cover the pan with a lid and let it simmer for a few minutes.
Add Water and Chili Powder:
Add 1/4 cup of water to the pan and stir.
Add 1/4 teaspoon of red chili powder and stir to combine.
Let the mixture simmer until the chives are flattened and most of the water has evaporated.
Add and Cook Eggs:
Once the chives are flattened, add two large eggs to the pan.
Scramble the eggs with the chives on medium heat until fully cooked.
Add additional salt to taste.
Serve:
Serve hot as a side dish or a main dish with rice or bread.
