1 yellow onion, diced
1 whole duck, chopped
1 tablespoon turmeric powder
1 tablespoon red chili powder
1/4 tablespoon javentri powder
1 tablespoon garlic powder
1/2 teaspoon white pepper powder
1 tablespoon jeera (cumin seeds)
1 tablespoon coriander powder
1 tablespoon mixed black and white whole peppers
1 tablespoon cloves
1/2 tablespoon cinnamon powder
5 cardamom pods
3 bay leaves
2 cinnamon sticks
1 1/4 tablespoon ginger paste
1 1/4 tablespoon garlic paste
1 tablespoon salt
1/2 lemon, juiced
1 tablespoon of vegetable oil (extra oil as needed)
1 cup water
Prepare the Spice Mix:
In a bowl, combine the following ingredients:
1 tablespoon turmeric powder
1 tablespoon red chili powder
1/4 tablespoon javentri powder
1 tablespoon garlic powder
1/2 teaspoon white pepper powder
1 tablespoon jeera (cumin seeds)
1 tablespoon coriander powder
1 tablespoon mixed black and white whole peppers
1 tablespoon cloves
1/2 tablespoon cinnamon powder
5 cardamom pods
3 bay leaves
2 cinnamon sticks
1 1/4 tablespoon ginger paste
1 1/4 tablespoon garlic paste
1 tablespoon salt
1/2 lemon, juiced
Add some oil and a little water to the mixture. Stir well to form a smooth spice mix.
2. Cook the Onion:
In a pan, heat some oil over medium heat.
Add the sliced onion and fry until golden brown.
Combine Onion with Spice Mix:
Add the fried onion to the spice mix. Stir well.
3. Cook the Duck:
In the same pan, add the duck pieces and fry for a minute.
Add the spice mix to the duck, ensuring the duck is well-coated with the spices.
Pour in 1 cup of water.
4. Simmer:
Bring the mixture to a high simmer.
Reduce the heat and let it cook until the duck is tender and the flavors have melded together.
5. Serve:
Once the duck is cooked and the sauce has thickened, remove from heat.
Serve hot with your choice of side, such as rice or bread. Enjoy your flavorful and aromatic duck dish with sliced lemon or achar for extra acidity!
