4 snake gourd, washed, peeled, ends chopped off, and thinly sliced
2 potatoes, peeled and washed
1 yellow onion, chopped
1 garlic clove, chopped
1 lb shrimp, cleaned and deveined
Vegetable oil (as needed)
Salt (to taste)
1/2 teaspoon turmeric powder
1 teaspoon chili powder
1/2 cup water
Prepare the Vegetables:
Wash and peel the snake gourd, then chop off the ends.
Slice the snake gourd vertically and then chop it thinly.
Peel the potatoes and chop them into small pieces.
Chop the yellow onion and the garlic clove.
Cook the Shrimp:
Heat oil in a pan over medium-high heat.
Add the shrimp to the pan and cook until they start to turn pink.
Add Aromatics:
Add the chopped yellow onion to the pan and stir.
Add salt, turmeric powder, chili powder, and chopped garlic.
Stir well to combine the spices with the shrimp and onions.
Add Water:
Add half a cup of water to the pan and stir.
Cook the Vegetables:
Add the chopped snake gourd and potatoes to the pan.
Stir to combine all the ingredients.
Simmer:
Reduce the heat to low, cover the pan, and let it simmer until the vegetables are softened and fully cooked. Stir occasionally to prevent sticking.
Serve:
Once the vegetables are cooked and the flavors are well combined, remove from heat.
Serve hot with rice.Â
